Groton Native Will Gilson Bringing Puritan Tavern to Town Center

Award-winning chef and Groton native Will Gilson has announced plans to open Puritan Tavern in Groton Center in late summer 2026. Gilson, owner of several acclaimed restaurants through the Puritan Hospitality Group — including Cambridge’s Puritan & Co., Puritan Oyster Bar, Geppetto, and Amba — is bringing an approachable New England tavern concept to the former Station House location. The new restaurant will feature classic regional fare, private event space, and future outdoor dining, creating a welcoming gathering place for residents and visitors while adding to Groton’s growing reputation as a destination for dining, culture, and community.
